The Great Eatscape at SM Aura Premier: Back at Kettle and Lovin' It.

Nothing complicated, just simple and comforting good food that works all the time...


The third stop in The Great Eatscape at SM Aura Premier, it was good to be back at an old favorite. From their signature Buttermilk Fried Chicken and Shrimp Po'Boy to the Steak & Marrow, Kettle never fails to satisfy your cravings for classic comfort food. And with new additions to their extensive menu, it can only get better...at Kettle.

Located high above at the SM Aura Premier's Skypark, Kettle brings its own distinctive take on comfort food with the innovative culinary style of Chef Chiloy Santos. Named after the classic kitchen staple, Kettle takes comfort food seriously. And that's why their Buttermilk Fried Chicken is one of the metro's best...  


SM Aura Premier is quickly becoming a foodie destination in itself, offering a wide range of dining options. At Kettle, you just can't go wrong with their wide array of comforting dishes, like the Shrimp Tostada (P 229), a refreshing and light starter with the fresh and clean notes of shrimp tomato salsa on crisp tortilla topped with red pepper coulis. The crisp freshness of the greens and the briny sweetness of the shrimps are rounded out by the vibrant and tart notes of the tomato salsa, opening up your palate for the next round of dishes...


The Pan-Fried Halibut (P 519), with premium imported halibut on chorizo brown rice topped with sauteed vegetables, is a light and healthy meal option at Kettle. The delicate notes of the tender, creamy, almost melt-in-your-mouth halibut are punctuated by the fresh flavors of the mildly sweet sauteed vegetables, perfectly finished by the soft and fluffy chorizo brown rice for a complete and satisfying meal.


Known for their signature Buttermilk Fried Chicken (for more on Kettle, see one of my blog's earliest posts, Taking Comfort Food to the Next Level at Kettle), Kettle adds a new variant with some serious heat with their Spicy Buttermilk Fried Chicken (P 599), tender, juicy and crisp southern-style fried chicken seasoned with spices and served with honey-glazed jalapeno cornbread, country gravy and Cajun honey. Marinated in buttermilk for a day, battered and deep-fried to perfection, each crunchy bite delivers the juicy flavors of chicken followed by a soothing layer of heat that makes you go for a second and third bite. The rich juicy notes of the chicken are balanced by the spices. Add some gravy for even more flavors, and finish it off with the cornbread drizzled with Cajun honey. Perfect.


And here's the beef. Kettle's signature Steak Frites (P 899), fork-tender US Angus Flank Steak draped with Kettle Steak Butter and served with crisp shoestring potatoes, another personal favorite. Perfectly grilled to medium with a juicy pink center, each savory bite delivers pure beefy richness. I've always enjoyed my steaks without any sauce, a dab of butter usually works for me. The Kettle Steak Butter adds that extra layer of rich flavors without overpowering the steak, just the way I like it. The crisp fries complete the dish.


Kettle's new Nori Fried Chicken & Matcha Waffle (P 399), soft matcha waffle with a crisp outer layer topped with Japanese-style fried chicken drizzled with nori powder and served with creamy white miso butter and maple syrup, adds a distinct Japanese spin to the classic chicken and waffle and combo. I sampled Kettle's new dish previously at Resorts World Manila's Matcha Festival (more on my previous post, The Green Matcha Mile: Resorts World Manila's Matcha Festival), and I'm glad to see it on the regular menu.


The distinctive hint of match adds a new and refreshing spin to the usual waffle, soft with a crisp outer layer, pairing so well with the white miso butter and the nori and cajun-seasoned fried chicken. It's this playfully inventive style of Kettle that makes me come back again and again, infusing creative twists to familiar and comforting dishes.

And there's more. Like Kettle's Pork & Potato Strips (P 389, L), with crunchy pork belly, fresh potato strips and fried herbs drizzled with red pepper aioli and truffle oil; and the classic Cheese Steak Roll (P 339, R), with thinly sliced ribeye topped with provolone cheese, sauteed onions and banana pepper on a soft buttered roll...


Cap your comforting feast at Kettle with the indulgent Warm Chocolate Bread and Butter Pudding (P 229) topped with velvety smooth vanilla ice cream and caramel sauce, a sinful dessert pairing contrasting textures and flavors in a seamless blend. It's always good to be back...at Kettle.
